How to Grill the Perfect Pork Chop

Grilling instructions

1. Turn on your BBQ, clean the grill grates, and allow the BBQ to heat up to 500°F.

2. While the BBQ is heating up, take the pork chops out of the refrigerator and season them well on both sides with your favourite dry rub or some classic salt and pepper. Tip: There is no need to marinate pork overnight as pork takes on flavour very quickly, usually within 10 minutes.

3. Place the pork chops on the heated grill, close the lid, and let the BBQ do its thing. After 3–4 minutes, lift the lid and flip the chops. Then close the lid again and cook for another 3–4 minutes. Cooking time varies on the thickness of the pork chops. For example, 1” thick chops need a total cooking time of approx 8 – 9 minutes. Tip: If the pork chops stick to the grill while being flipped, leave them to cook some more as the BBQ is not done with them yet.

4. Open the BBQ lid and brush on the BBQ sauce or glaze of choice. Cook for another minute, flip the chops, and brush sauce on the other side. Tip: If you brush on the sauce too early, the sauce will burn and taste bitter.

5. Remove the pork chops from the BBQ when the meat thermometer reaches 140°F. Let the pork chops rest for another 5 minutes allowing the temperature to rise slightly. The perfect pork chops should be a moist, juicy and faintly pink at 145°F.
