Glazed Cottage Roll
A cottage roll is a ham cured in a brine (Courtesy of Alice May Macdonald)
Ingredients
- 4-5 lbs Cottage Roll
- ½ Cup Brown Sugar
- 2 Tbsp Dry Mustard
- 1 Tbsp Orange Juice
- 1 tsp Grated Orange Rind
Cooking Directions
- Cover cottage roll in its poly film wrapper with water. Pick several times.
- Simmer 1 ¼ hours. Remove wrapper.
- Place cottage roll on rack in shallow pan; cover with glaze.
- Bake at 325°F for 30 minutes, brushing occasionally with glaze.
