Spanish Rice

Ingredients

  • ¼ Cup Olive Oil
  • 3 Garlic Cloves, smashed
  • 3 Tomatoes Stewed or Fresh, peeled & diced
  • Roasted Red Peppers, in strips
  • 6 Cups Boiling Chicken Broth
  • Peas & Green Beans
  • 1 Medium Green Pepper, chopped
  • 18 - 24 Raw Shrimp
  • 2 Cups Diced Pork
  • 3 Cups Rice (pearl or long grain)

Cooking Directions

  1. Sauté garlic, pepper, tomatoes in pan until tender.
  2. Add pork to above mixture.
  3. Add peas & green beans and cover for a couple of minutes.
  4. Transfer above to casserole dish. Top with chicken broth and add rice (spreading evenly).
  5. Decorate with shrimp, roasted red peppers and parsley. Salt to taste.
  6. Bake 350-400°F oven to approximately 30 - 40 minutes until rice is done or broth is consumed (do not cover casserole dish). Note: once rice is done remove from casserole dish and cover.
  7. Let stand for about 10-15 minutes before serving.
