  1. On a dinner plate or bowl place spinach, top with tomatoes, orange segments, mushrooms, golden raisins and sliced pork tenderloin.
  2. Drizzle bacon vinaigrette over salad greens and garnish with bannock fritters. Enjoy!
Cracked Pepper Bacon Balsamic Vinaigrette
  1. In small frying pan, cook bacon over med heat till almost crispy, add garlic and olive oil. Cook one more minute.
  2. Remove from heat and mix in flour to incorporate oil. Place this mixture into small bowl, whisk in remaining ingredients till a vinaigrette is achieved.
  3. Note: if you own a hand blender, use this to make this easy vinaigrette, no fail.
Bannock Fritters
  1. Mix dry ingredients together in bowl, add butter, cold water and parsley to dry mixture. Blend ingredients together to form a ball, careful not to overmix.
  2. In shallow frying pan, heat 1 inch of oil to medium heat. Using two teaspoons, drop batter into oil and fry till golden brown. Make fritters size of nickels.
