By skim Posted June 14, 2017 In Bacon, Pork Loin & Tenderloin, Recipes Garlic Smoked Pork Tenderloin Salad2017-06-142017-06-14https://www.johnstons.ca/wp-content/uploads/2018/02/header-with-badge90.pngJohnston'shttps://www.johnstons.ca/wp-content/uploads/2017/06/garlic-smoked-pork-tenderloin-salad_web.jpg200px200px 0 Garlic Smoked Pork Tenderloin Salad with a Warm Cracked Pepper Bacon Balsamic Vinaigrette and Parsley Bannock Fritters Print Recipe Created by Chef Terry Westhaver of The Embassy - The Unofficial Fraser Valley Restaurant & Lounge Garlic Smoked Pork Tenderloin Salad with a Warm Cracked Pepper Bacon Balsamic Vinaigrette and Parsley Bannock Fritters Print Recipe Created by Chef Terry Westhaver of The Embassy - The Unofficial Fraser Valley Restaurant & Lounge Ingredients 2 cups baby spinach washed 6 cherry tomatoes cut in half 1 Tbsp golden raisins or sundried cranberries 2 naval oranges peeled and segmented 3 button mushrooms sliced 4 oz Johnston's Garlic Smoked Pork Tenderloin sliced thin Cracked Pepper Bacon Balsamic Vinaigrette 2 slices Johnston’s Cracked Pepper Bacon slivered thin 3 Tbsp olive oil 1 Tbsp all purpose flour 1 tsp garlic minced 1 tsp dijon mustard 3 Tbsp balsamic vinegar 2 tsp maple syrup 1 tsp chives chopped salt & pepper to taste Bannock Fritters 1.5 cups all purpose flour 1 tsp sea salt 1 Tbsp baking powder 2 oz melted butter 6 oz cold water 1 Tbsp parsley chopped 8 oz canola oil Servings: Instructions On a dinner plate or bowl place spinach, top with tomatoes, orange segments, mushrooms, golden raisins and sliced pork tenderloin. Drizzle bacon vinaigrette over salad greens and garnish with bannock fritters. Enjoy! Cracked Pepper Bacon Balsamic Vinaigrette In small frying pan, cook bacon over med heat till almost crispy, add garlic and olive oil. Cook one more minute. Remove from heat and mix in flour to incorporate oil. Place this mixture into small bowl, whisk in remaining ingredients till a vinaigrette is achieved. Note: if you own a hand blender, use this to make this easy vinaigrette, no fail. Bannock Fritters Mix dry ingredients together in bowl, add butter, cold water and parsley to dry mixture. Blend ingredients together to form a ball, careful not to overmix. In shallow frying pan, heat 1 inch of oil to medium heat. Using two teaspoons, drop batter into oil and fry till golden brown.
