Smoked Bacon Wrapped Meatloaf

Ingredients
Sweet and Savoury BBQ Rub

Instructions
  1. Preheat smoker to 225°F.
  2. In a large bowl, mix very well the ground pork, egg, 1 cup BBQ sauce and BBQ rub.
  3. In a large baking pan, form a loaf that is 6-inches wide and 3-inches high.
  4. Paint meatloaf with ¼ cup of BBQ sauce and sprinkle ¼ cup of the sweet and savoury BBQ rub on top.
  5. Cover entire meatloaf with bacon shingled.
  6. Place in preheated smoked until internal temperature reaches 165°F.
  7. Let rest of 15 minutes.
  8. Cut meatloaf into 1-inch thick slices and serve.
Sweet and Savoury BBQ Rub
  1. 1. Mix rub ingredients very well and store in an airtight container.
