- 1 package dried yellow split peas
- 1 package Farmer Sausage
- 1 large onion chopped
- 1 teaspoon salt & pepper
- ½ teaspoon pepper
- ½ teaspoon dried thyme
- 1 bay leaf
- Garnish with cilantro green onion, or cheese to taste.
Rinse split peas with cold water. Place in a Dutch oven or pot and thoroughly cover with fresh water. Bring to a boil for 2 minutes before removing from the heat. Cover pot and let stand for 1-4 hours or until peas are softened. Drain and rinse peas.(if you have an instant pot, this step goes a lot quicker!) Slice and sear Johnston's Farmer sausage before adding in onion, salt, pepper, thyme, and bay leaf. Fill the pot with water until the ingredients are thoroughly covered.
Bring your soup to a boil then reduce heat and cover. Finally, let simmer for 1-1/2 hours, stirring occasionally. Test peas for desired softness.
