Smoked Bacon Wrapped Meatloaf

- 5 pounds Johnston's Ground Pork
- 1 large egg
- 1 ¼ cup bbq sauce your favourite
- ¾ + ¼ cup sweet & savoury BBQ rub recipe below
- 24 slices Johnston’s Bacon
Sweet and Savoury BBQ Rub
- 2 cups demerara sugar
- ½ cup smoked paprika
- ¼ cup granulated garlic
- ¼ cup find ground black pepper
- ¼ cup ground mustard
- 2 tablespoons cayenne pepper
- 2 tablespoons granulated salt
Preheat smoker to 225°F.
In a large bowl, mix very well the ground pork, egg, 1 cup BBQ sauce and BBQ rub.
In a large baking pan, form a loaf that is 6-inches wide and 3-inches high.
Paint meatloaf with ¼ cup of BBQ sauce and sprinkle ¼ cup of the sweet and savoury BBQ rub on top.
Cover entire meatloaf with bacon shingled.
Place in preheated smoked until internal temperature reaches 165°F.
Let rest of 15 minutes.
Cut meatloaf into 1-inch thick slices and serve.
