Smoked Pork Tenderloin, Bocconcini & Tomato Skewers
Recipe created by Chef Steve Waldron of Fat Wally's Firehouse BBQ
- 6 mini wooden skewers
- Johnston’s Smoked Pork Tenderloin cut into 6 bite-sized pieces
- 6 mini Bocconcini balls
- 6 cherry tomatoes
- 6 fresh basil leaves
- flavoured balsamic reduction
Place one piece basil, tomato, Bocconcini and smoked tenderloin on each skewer so the tenderloin is the last piece acting as a base to keep the skewers upright
Drizzle balsamic reduction over serving platter then place each skewer on the platter on top of the reduction
