Bacon Butter & Bacon Oil

Bacon Butter
- 1 lb unsalted butter softened
- 4 strips bacon cooked, dried, and crumbled (about 3/4 cup)
- pinch salt & pepper
- ⅛ cup chives finely chopped
Bacon Oil
- 2 strips bacon cooked well & dried of excess grease
- 2 cups olive oil
Bacon Butter
Beat butter in a mixer and slowly add rest of ingredients
Use melon baller, piping bag, or roll into a tube and cut to portion butter
Place in fridge for 5 min to firm
To store, keep in the fridge for up to 5 days or freeze portioned to use when needed
Great on top of cooked meat or vegetable, or add to mashed potatoes, or whatever your bacon-loving heart desires
Bacon Oil
Chop up bacon and add to sauce pan with oil
Carefully bring to rolling boil, simmer for 2 minutes
Remove from heat and set for 10 minutes
Strain oil into container with lid and discard bacon
Label and keep in fridge for up to 1 month
Enjoy oil for dressings or use in lieu of cooking oil for any desired recipes
