Cut sausage into bite size pieces. In a large saucepan or electric fry pan, cook sausage over medium-high heat until brown, about 10 minutes, turning often. Remove with dotted spoon and set aside
Add onion, garlic and green pepper to pan drippings. Cook over medium heat, stirring often until brown
Stir in tomatoes, parsley, basil, oregano and pepper to taste
Add browned sausage. Simmer uncovered, stirring occasionally, for 30-40 minutes. Taste and adjust seasoning
To serve, sprinkle with additional chopped parsley
