Red Velvet Bacon Cupcakes

- 12 strips Johnston’s Bacon cooked (reserve bacon grease)
- 1 package red velvet or chocolate cupcake mix
- 1 container cream cheese icing
Cut 6 strips of bacon at an angle into halves
Chop up remaining 6 strips into bacon bits
Prepare cupcake mix as directed on package using bacon grease instead of oil for flavour and extra moistness. If you do not have enough bacon grease, complete the prescribed amount with vegetable or canola oil. Combine bacon bits to prepared cupcake mix
Bake cupcakes as directed on package
Frost cupcakes with cream cheese icing once cooled and place bacon strip on each cupcake (point end into cupcake)
