Pre-heat oven to 350°F
In a bowl, mix apples, cinnamon, brown sugar, lemon juice and chopped bacon
Pour mixture onto shell crust
Place 3-4 slices of uncooked bacon slices on top of the pie filling, spaced evenly apart in a parallel direction
Basket weave (under, over, under, etc.) the remaining 3-4 slices of uncooked bacon intersecting the first set of slices
Sprinkle the bacon lattice with brown sugar
Cook until apples are tender and bacon is cooked, about 35 minutes
Tip: For the second layer of bacon slices, alternating the weave (starting the first slice from over, second slice from under, etc – see picture for clarification) will keep the bacon slices from curling up
