Zesty Sausage Stew

  • 1 lb Johnston's Farmer Sausage
  • 2 medium onions coarsely chopped
  • 1 large green pepper coarsely chopped
  • ¼ cup chopped fresh parsley
  • 2 tsp crushed dried oregano
  • 2 garlic cloves minced
  • 1 can (28oz) tomatoes drained
  • 2 tsp crushed dried basil
  • black pepper & traditional chopped parsley


  • Cut sausage into bite size pieces. In a large saucepan or electric fry pan, cook sausage over medium-high heat until brown, about 10 minutes, turning often. Remove with dotted spoon and set aside
  • Add onion, garlic and green pepper to pan drippings. Cook over medium heat, stirring often until brown
  • Stir in tomatoes, parsley, basil, oregano and pepper to taste
  • Add browned sausage. Simmer uncovered, stirring occasionally, for 30-40 minutes. Taste and adjust seasoning
  • To serve, sprinkle with additional chopped parsley
