Recipe courtesy of Well Seasoned Gourmet Food Store’s Angie Quaale (www.wellseasoned.ca)
- 1 lb Johnston’s Fresh Ground Pork
- 1 can diced tomatoes
- ½ small cooking onion diced
- ½ small red bell pepper diced
- 2 Tbsp Mexican chili powder
- 1 Tbsp garlic powder
- 1 tsp chipotle powder
- 8 Johnston’s Bacon Weave Taco Shells
Brown the ground pork in a large skillet.
Add the full can of tomatoes with the juice, onion, and seasonings.
Bring to a boil, reduce heat to a simmer, stirring occasionally, until most of the liquid is gone; approximately 10 minutes.
Spoon the mixture into the taco shells, top with grated cheddar, lettuce, tomatoes and fresh salsa.
Johnston’s Bacon Weave Taco Shells
You will need 4 strips of Johnston’s Bacon per taco shell.
Create an overlaping bacon fabric by weaving strips together. Drape the weaved strips over a taco shaped mold (such as an oven safe pastry blender) to form a signature taco shape.
Bake on a sheet pan in the oven at 400°F until brown and crispy. Once cooled fill with the above taco ingredients.
