Spanish Rice


  • ¼ cup olive oil
  • 3 garlic cloves smashed
  • 1 medium green pepper chopped
  • 3 tomatoes stewed or fresh peeled & diced
  • 2 cups diced pork
  • peas & green beans
  • salt and pepper to taste
  • 6 cups boiling chicken broth
  • 3 cups rice (pearl or long grain)
  • 18-24 raw shrimp
  • roasted red peppers in strips


  • Sauté garlic, pepper, tomatoes in pan until tender.
  • Add pork to above mixture.
  • Add peas & green beans and cover for a couple of minutes. Season to taste.
  • Transfer above to casserole dish. Top with chicken broth and add rice (spreading evenly).
  • Decorate with shrimp, roasted red peppers and parsley. Salt to taste.
  • Bake 400°F oven to approximately 30-40 minutes until rice is done or broth is consumed (do not cover casserole dish). Note: once rice is done remove from casserole dish and cover.
  • Let stand for about 10-15 minutes before serving.
