Preheat your oven to 400°F (200°C).
Start by making the mashed potato topping. Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
Mash the potatoes with butter, milk, salt, and pepper until smooth and creamy. Set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and carrots and cook until softened about 5 minutes. Add the minced garlic and cook for another minute.
Add the ground pork to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
-Stir in the tomato paste, Worcestershire sauce, broth, stout, dried thyme, salt, and pepper. Simmer for 10 minutes, allowing the flavors to blend together. Taste and adjust seasoning if necessary.
Stir in the frozen veggies and cook for another 2-3 minutes.
Transfer the pork mixture to your baking dish and spread it out evenly.
Spoon the mashed potatoes over the pork mixture, spreading them out with a spatula. Or using a piping bag for an added design to the top!
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the mashed potatoes are golden brown and the filling is bubbly.
Remove from the oven and let it cool for a few minutes before serving.
