Course Main Dish

  • Johnstons Ham

  • 2 tbs johnstons sweet Hogg rub
  • 2 tbs maple sugar

  • ¼ cup bourbon aged maple syrup
  • 3 tbs worcestershire sauce
  • 3 tbs balsamic vinegar
  • 1 tsp chilli flakes
  • ½ tsp cloves
  • 1 tbs hot sauce
  • Salt and pepper to taste.

  • Apple cinnamon spritz

  • Take out your amazing ham and score the top, 1 inch cubes
  • Make sure all the seasoning get down into the cuts of your ham
  • Roll your smoker at 275-325 degrees F. Your ham is already cooked so you just want to get some smoke and bring it to 125 degrees F, internal temp.
  • After 1.5 hours, you’ll mist the ham with your apple cinnamon spritz
  • After 1.5-2 hours you’ll mop on your glaze and let that melt on for an additional 30 minutes.
  • Take your ham off the smoker, and get ready to slice into the best ham you’ve ever had!
  • You can use the pan drippings for even more amazing flavour! Enjoy!
